Grapefruit Tart with a Coconut Crust


Wow, this tart is stunning, Zainab!!! I love anything citrusy, so this tart beauty is totally up my alley! And I am loving that crunchy coconut crust! Perfection..
 
INGREDIENTS
Crust:
  • 1 ¾ cup graham cracker crumbs
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • ⅓ cup unsalted butter, melted
  • ½ cup unsweetened coconut flakes
Filling:
  • ¾ cup sugar
  • 3 tablespoons cornstarch
  • 1 ½ cups grapefruit juice
  • 3 egg yolks
  • 6 tablespoons butter, cut up
  • 1 drop red food coloring
Topping:
  • ¼ cup toasted coconut flakes
  • 2 tablespoons chopped dry roasted pistachio nuts
