Balsamic Chicken Skewers with Israeli Couscous

Balsamic Chicken Skewers with Israeli Couscous


Yield: 8 skewers
Prep Time: 20 minutes (active time)
Cook Time: 15 minutes

Ingredients:

  • 2 pounds NatureRaised Farms® boneless skinless chicken thighs
  • 1 cup balsamic vinegar
  • 1/3 cup brown sugar (or palm sugar)
  • 1 large garlic clove, minced
  • 1 large rosemary sprig, leaves removed and chopped
  • 12 ounces Israeli couscous (pearl couscous)
  • 15 ounce can chickpeas, drained
  • 1/2 cup chopped roasted red peppers
  • 1/3 cup chopped red onion
  • 2 tablespoons fresh chopped mint
  • 2 tablespoons fresh chopped parsley
  • 2 tablespoon olive oil
  • Salt and pepper
